The perfect way to use holiday leftovers

These gluten-free, dairy-free, Whole30, Paleo Butternut Squash & Bacon Turkey BurgerFit Patties are absolutely the perfect way to use those Thanksgiving and holiday leftovers! I used to freeze so much of the leftover turkey because we got sick of eating it before it was all gone but not with these BurgerFit patties! They are so delicious!

These remind me of the fried chicken patties I use to eat as a kid or the vegan ones that my husband and I were obsessed with when we first started dating. My 5-year-old son wouldn’t stop talking about how good they were! He had no idea he was eating butternut squash, and loving it. They are that good! You can serve them a number of different ways — a sandwich, over a salad, by itself with other veggies and sides. My favorite is over a salad with a drizzle of Arizona Heat Koops’ Mustard over it and my Keto Beet Kraut.

When I cook these patties in the skillet, I usually use leftover bacon fat from cooking the bacon but you can easily use any cooking fat that you prefer to cook with: coconut oil, avocado oil, rendered lard, tallow, etc.

Even though I used the Koops’ Spicy Brown Mustard, you can use almost any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:
