BurgerFit Mexican Casserole

I love easy, healthy meals and Mexican food. I feel that this recipe is the perfect example of what my family and I love eating. I truly believe everything tastes better with a Mexican seasoning blend!

Equipment

  • Glass baking dish
  • Utensil for mixing
  • Knife

Ingredients

  • 1 can diced tomatoes and green chilies
  • 12 oz frozen cauliflower rice (or frozen if you prefer making it yourself)
  • 1 tsp salt
  • 1 tsp garlic
  • 1 can black beans drained
  • 2 tbsp chilli powder
  • 1 tsp cayenne pepper (optional)
  • 1 bundle collard greens
  • 1/2 tbsp cumin
  • 2-3 BurgerFit Burgers cut into bite-sized pieces
  • 1 cup cheddar cheese grated

Instructions

  • Add all ingredients except for cheese, BurgerFit burgers and cilantro to a baking dish and stir just until combined.
  • Bake on 375 degrees for 25 minutes stirring halfway through.
  • Remove from oven. Sprinkle with cheese.
  • Put back into oven for 5 more minutes to melt cheese and heat burgers. 
  • Remove from oven and top with fresh cilantro.
