Cucumber Tomato Salad

If you are looking for an easy recipe for all of those cucumbers and tomatoes that are in season, this is the one for you! Making your own dressing for this salad gives you the ability to add any additional herbs and spices that you have on hand!

Equipment

  • Julienner
  • Large bowl
  • Mason jar
  • Tongs

Instructions

  • Heat BurgerFit burgers on medium heat in a skillet on the stove.
  • While burgers are heating, mix the olive oil, apple cider vinegar, and Dijion Koops' Mustard in a mason jar or bowl. Shake mason jar to mix.
  • Julienne cucumbers and chop tomatoes and place in a bowl. Pour as much dressing over it as you like and stir. Store any leftover dressing in the fridge. 
  • Serve on a plate with BurgerFit burgers.

Notes

  1. Add goat cheese or mozzarella if you eat dairy.
  2. Apple cider vinegar can be swapped out of for other vinegar you have.
This recipe is only dairy-free if you use a dairy-free pesto in the burger!
