Butternut Squash, Dill, and Feta

This amazing gluten-free butternut squash recipe could not be any easer to make and it is so delicious! It only takes four ingredients: butternut squash, salt, dill, and feta cheese.

  • Preheat oven to 400 degrees.
  • Remove the butternut squash stem and discard.
  • Using a vegetable peeler or knife, remove the skin from the outside of the butternut squash.
  • Cut the squash lengthwise. Scoop out the seeds and discard.
  • Cut into 1/2 inch cubes.
  • Add cubed butternut squash to baking sheet and coat with cooking fat of choice. Sprinkle with salt and pepper.
  • Cook in the oven for 20-30 minutes, or until tender when pierced with a fork.
  • Add cubes to serving dish and add the dill and feta. Toss to mix and serve.


This can be used as a stand-alone meal or added to other recipes for a delicious switch up! Use this to top pizza, salads, or add to a wrap!
