Brussels Sprouts BurgerFit Burger

Don’t judge this burger before you try it! Raisins in a burger may seem like a strange addition, but they provide a sweetness that makes it irresistible!

Ingredients

  • 1 tablespoon cooking fat
  • 1 package brussels sprouts
  • 1 1/2 teaspoon salt divided
  • 1 small package raisins
  • 1 garlic clove or 1/2 teapsoon garlic powder
  • 1 lb ground meat

Instructions

  • Preheat oven to 400 degrees. Cut ends from brussels sprouts, and remove and discard any yellow or brown leaves. Cut brussels sprouts in half. Mix them in baking dish with 1 tablespoon cooking fat, ½ teaspoon salt, and crushed garlic clove. Roast in oven for 35 to 40 minutes, until crisp on the outside and tender on the inside.
  • While the brussels sprouts are cooking, add raisins to a bowl with water and let soak. This makes them easier to chop in the food processor.
  • Once the brussels sprouts are cooked, remove raisins from water. Add both to the food processor (or finely chop). Taste vegetable mixture and add more salt and/or garlic if desired. Let the mixture cool completely. 
  • In a large bowl, mix the ground meat and remaining teaspoon of salt. Gradually incorporate vegetable mixture into the ground meat. Add as much as you can while still being able to form your burgers as normal.
    *If you end up adding too much vegetable mixture, don’t worry! Just form your burgers and cook in the oven for 20 minutes at 350 degrees.
  • Cook burgers on medium heat on the stove for 5 minutes on each side or to your preference. Cooking times can vary.
  • Optional: Serve with remaining brussels sprouts on the side.
