Add the all ingredients except the coconut flakes to a food processor. Blend until combined and a dough is formed. Stop and scrape down the sides as needed.
Add the shredded coconut to a small bowl or plate.
Once blended, roll into small balls and roll in coconut. Place on a small sheet tray or plate and place in fridge to chill.
Store covered in the fridge for up to 10 days or in the freezer for up to 3 months.
Makes 20 balls or more if rolled smaller.

The pecans and cashews can be substituted by replacing one for the other if you just have one type or using walnuts.

Substitute a portion of the dates with maple syrup if you don't have enough dates on hand.
