Carrot Cake Bites

  • Food processor
  • Rubber Spatula
  • Dry measuring cups
  • Measuring spoons



  • Add the all ingredients except the coconut flakes to a food processor. Blend until combined and a dough is formed. Stop and scrape down the sides as needed.
  • Add the shredded coconut to a small bowl or plate.
  • Once blended, roll into small balls and roll in coconut. Place on a small sheet tray or plate and place in fridge to chill.
  • Store covered in the fridge for up to 10 days or in the freezer for up to 3 months.
  • Makes 20 balls or more if rolled smaller.


  • The pecans and cashews can be substituted by replacing one for the other if you just have one type or using walnuts.
  • Substitute a portion of the dates with maple syrup if you don't have enough dates on hand.
