Gluten-Free Un-Chicken Noodle Soup

Oh, how I love this recipe! It combines my love of chicken noodle soup with my love of BurgerFit burgers. This is one of my favorites when we aren’t feeling well or it is a cold winter night.

Ingredients

  • 1 tbsp cooking fat
  • 1 onion chopped
  • 64 oz chicken broth
  • 3 carrots sliced
  • 3 red potatoes chopped
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic
  • 1 tsp paprika
  • 2 bay leaves
  • 2-4 kale leaves chopped
  • 4 oz gluten-free noodles or your favorite noodles
  • 3-4 BurgerFit burgers chopped

Instructions

  • In a large pot, add cooking fat and onions, and cook on medium-high heat until onions are browned, approximately 3-4 minutes.
  • Turn down heat to medium and add broth.
  • Add the remaining ingredients except kale, noodles, and BurgerFit burgers.
  • Simmer for 30 minutes, stirring occasionally. Turn down the heat if broth begins to boil.
  • Add kale, noodles, and BurgerFit burgers, and cook for 3-5 minutes to heat burgers and cook noodles.
