Oh, how I love this Gluten-Free Un-Chicken Noodle Soup recipe! It combines my love of chicken noodle soup with my love of BurgerFit burgers. This is one of my favorites when we aren’t feeling well or it is a cold winter night.

Why eat the Gluten-Free Un-Chicken Noodle Soup?

There is a reason for eating soup when you are sick, it is filled with vitamins! Between the bone brown, which is loaded with nutrients helping keep you hydrated, proteins from the meats, and more nutrients from the vegetables, you get a lot of out of a bowl of soup! The Gluten-free Un-Chicken Noodle soup is one of my favorite go-to’s because I can add other vegetables I may already have, such as cabbage. Even if the rest of my family won’t eat the veggies, in this soup, they are still getting them through the BurgerFit burgers.
It can be really hard to get kids to eat those vegetables anytime but when they are not feeling, well it is even harder! Replacing the chicken with a BurgerFit burger sneaks those vegetables in without them realizing it.

Gluten-Free Un-Chicken Noodle Soup

Equipment

Ingredients

  • 1 tbsp cooking fat
  • 1 onion chopped
  • 64 oz chicken broth
  • 3 carrots sliced
  • 3 red potatoes chopped
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic
  • 1 tsp paprika
  • 2 bay leaves
  • 2-4 kale leaves chopped
  • 4 oz gluten-free noodles or your favorite noodles
  • 3-4 BurgerFit burgers chopped

Instructions

  • In a large pot, add cooking fat and onions, and cook on medium-high heat until onions are browned, approximately 3-4 minutes.
  • Turn down heat to medium and add broth.
  • Add the remaining ingredients except kale, noodles, and BurgerFit burgers.
  • Simmer for 30 minutes, stirring occasionally. Turn down the heat if broth begins to boil.
  • Add kale, noodles, and BurgerFit burgers, and cook for 3-5 minutes to heat burgers and cook noodles.
