We had friends visiting from out of town who were considering a move to Tennessee. We grilled out one night and invited over some other friends from town. I made the Gluten-Free Pickles and Greens Burger without telling anyone. At the end of the night, they were raving about the burgers and asked what was in them. When I told them pickles, the wife replied with “Oh, wow! I usually hate pickles!” It goes to show that even if you normally don’t like a vegetable that is in a BurgerFit burger, try it once. You never know, you may just like it!

The original catalyst for the entire BurgerFit idea came from eating a pickle that I thought tasted like Worcestershire. I instantly made the connection that if the pickle tasted this good by itself, I had to know what it would taste like in a burger. That’s what inspired this Gluten-Free Pickles and Greens Burger recipe, and here we are, several years later with several recipes and a cookbook.

Why eat the Gluten-Free Pickles and Greens Burger?

All greens are full of a variety of vitamins and minerals with amounts varying by variety. Greens are also an excellent source of the carotenoids lutein and zeaxanthin. Both of these phytochemicals help protect the eye by warding off macular degeneration. I always look at the ingredients on the pickle jar and purchase the ones that are low in sugar to keep the burgers healthier.

Pickles & Greens BurgerFit Burger

Equipment

Ingredients

  • 1 tablespoon cooking fat
  • 3 cups greens of your choosing spinach, collards, swiss chard, kale, etc.
  • 2 cloves garlic or 1 teaspoon garlic powder, divided
  • 1 1/2 teaspoons salt divided
  • 1/2 cup pickles
  • 1 tablespoon mustard
  • 1 lb ground meat

Instructions

  •  Heat a skillet on medium heat with 1 tablespoon cooking fat. Add the greens, 1 clove of garlic, and ½ teaspoon salt, and saute until soft, about 5 minutes.
  • Once cooked, add the greens, pickles, garlic, and mustard to the food processor. Let the mixture cool completely. 
  • In a large bowl, mix the ground meat and remaining teaspoon of salt. Gradually incorporate the vegetable mixture into the ground meat. Add as much as you can while still being able to form your burgers as normal.
    *If you end up adding too much vegetable mixture, don’t worry! Just form your burgers and cook in the oven for 20 minutes at 350 degrees.
  • Cook burgers on medium heat on the stove for 5 minutes on each side or to your preference. Cooking times can vary.
  • Optional: Serve over a bed of greens with tomatoes, and onions.

    I don’t like pickles in my burger too but after trying this recipe, I gave up resisting! At first, I shredded the pickles, that’s the only way I would take it but after awhile, I got used to the flavor and started eating them in big slices. This burger is so tasty, you just want to eat it all day.
