Keto BurgerFit Antipasto Recipe

What inspired the recipe?
When I first learned what a zoodle was, I was pretty excited. I’m always game for anything that can give me the satisfaction of eating a noodle without the carbs associated with it!
I gravitated toward purchasing them already zoodled because I thought I would have to use one of those clunky, hand crank spiralizers that you would use for something like apples. We have one of those spiralizers for making sliced dehydrated apples and luckily, my husband and son make them and I just get to enjoy them! I am not a fan of anything that has a lot of parts to set up and clean so I thought I would get overwhelmed having to use one for zoodling.
But then I learned of the handheld spiralizer. Truth be told, my Godmother had sent me one months before but I had no idea what it was so I put it in my gadget basket and forgot about it. It wasn’t until I created this Keto BurgerFit Antipasto recipe for a World Food Championship fundraising event that I learned of the amazing handheld spiralizer to create zoodles. I’ve been addicted ever since!

This Keto BurgerFit Antipasto Recipe is super easy to prepare, filling, and delicious!
You can buy zoodles from the store, but they are so easy to make yourself! It can also save you a little money by doing your own zoodling. To make your own zoodles, all you’ll need a spiralizer and a zucchini! That’s it! This spiralizer from Amazon is affordable, easy to clean, and doesn’t take up much room in your pantry or cabinet drawers. It is also versatile, allowing you to spiral almost any vegetable! It’s the perfect tool to make zoodles on the fly.

Ingredients
- 10 oz zoodles zucchini noodles
- 2 cups halved cherry tomatoes
- 1 tbsp pesto
- 8 oz mozzarella cheese chopped into chunks, or you can use small balls.
- 1/2 red bell pepper
- 2 tbsp red wine vinegar
- 1-2 Zucchini Pesto Burgerfit Burgers cut into small, bite-sized pieces.
Instructions
- To prepare, mix all ingredients in the bowl.
