A new twist on basic potato salad

Growing up, I only knew of the Southern traditional way of making potato salad – with eggs and mayonnaise. It wasn’t until only a few years ago that I learned there are other ways of making potato salad when my younger brother and his wife made German potato salad. It soon became a family favorite! Several years ago they were based in Germany and learned how to make it from their wonderful German neighbors. And, I am so glad that they did! Their German potato salad is what inspired this Gluten-Free Three-Mustard Potato Salad recipe. I’m not sure what is all in their German Potato salad but when I think back on it, this is what I created.
 
The first time I made this for dinner, my husband, Micah, said it was the best potato salad he had ever eaten. It is now one of his favorite things that I make. Fletcher, my four-year-old, initially told me that he didn’t like salad and didn’t want any. I showed him it wasn’t a normal, green salad and got him to try it. He told me he LOVED it! And then ate all of his on his plate. This Gluten-Free Three-Mustard Potato Salad is truly one of those dishes that almost anyone will love, and it’s also dairy-free and Whole30 approved!
 
It pairs so well with a BurgerFit burger. I like calling this my double salad dinner, green salad for my BurgerFit burger, and Gluten-Free Three-Mustard Potato Salad as my side. It is so filling and full of so much nutrition!

Gluten-Free Three-Mustard Potato Salad

I love this recipe because it takes so little time to put together. Most of the time, it is cooking in the oven. It is perfect for taking to get-togethers and parties, or having for lunch or dinner. The leftovers are especially delicious after all of the flavors have sat together overnight.

Baking sheet
Knife
Large bowl

Ingredients

Instructions

  • Preheat oven to 425 degrees.
  • Dice potatoes into 1" pieces and place on baking sheet. Slice onion into thin half moons and toss with potatoes on baking sheet. Layer the bacon slices on top.
  • Cook for approximately 40 minutes, flipping bacon at 20 minutes. If you are using thin sliced bacon, you will need to check it sooner to prevent it from burning. Bacon will be done cooking around 30 minutes. Once bacon is done, remove from baking sheet and continue roasting the potatoes and onions for the remaining time. This will help brown the potatoes and caramelize the onions.
  • While bacon, potatoes, and onions are in the oven, prepare the dressing for the potato salad. In a jar mix all three Koops' mustards, balsamic vinegar, and olive oil. Do not add salt yet. Screw on lid and shake to mix ingredients together.
  • Once bacon is cool enough to handle, chop into small pieces with a knife.
  • Remove potatoes and onions from the oven once browned and caramelized. Let cool for a few minutes.
  • Pour everything from the baking sheet, including bacon drippings, into a bowl. Add chopped bacon and jar dressing and stir to evenly coated.
  • Taste to see if you need to add salt. A lot of times it is unneeded because of the bacon seasoning it.

Notes

This recipe for potato salad is eggless and does not contain eggs!

    Just like you Alane, the only potato salad I knew was the one with eggs and mayo. Wish me luck on introducing this to my husband, he is a little picky with eating vegetables but loves them when I put tons of onion and garlic and big slices of meat.
