The first time my mom cooked them for dinner a few years ago, my dad said, “These potatoes are delicious.” We just smiled and nodded our heads in agreement. After you peel and cook a kohlrabi, they do look a lot like potatoes!

Kohlrabis are high in potassium and vitamin C. Using their greens in this BurgerFit burger offers a boost of iron, Vitamin A, and carotenoids. If you can’t find kohlrabis, you can replace them with turnips- which are also incredibly nutritious!

Kohlrabi BurgerFit Burger

Ingredients
- 2 tablespoons cooking fat
- 2 kohlrabis with their greens
- 2 teaspoons salt divided
- 1/8 teaspoon pepper
- 2 teaspoons Worcestershire sauce
- 1 clove garlic 1/2 teaspoon garlic powder
- 1 lb ground meat
Instructions
- Heat a skillet on medium heat with 2 tablespoons cooking fat. Peel the skin off the kohlrabi with a vegetable peeler and discard the peelings. Chop kohlrabi into cubes. Saute the kohlrabi with 1 teaspoon salt and the pepper in the skillet until soft, about 10 minutes. Add the greens until they cook down, about 5 minutes.
- Once the kohlrabi and greens are cooked, put the kohlrabi, greens, worcestershire sauce and garlic in the food processor (or finely chop). Taste vegetable mixture and add more salt if desired. Let the mixture cool completely.
- In a large bowl, add the ground meat and remaining 1 teaspoon of salt. Gradually incorporate the vegetable mixture into the ground meat. Add as much as you can while still being able to form your burger as normal. (If you end up adding too much vegetable mixture, don’t worry! Just form your burger and cook in oven for 20 minutes at 350 degrees.)
- Cook burgers on medium heat on the stove for 5 minutes on each side or to your preference. Cooking times can vary.
- Optional: Serve as you would a traditional burger with your favorite cheese and condiments.
