Episode 1: What's in Our Pantry

What’s in our Pantry? During this season of social distancing, we are taking measures to protect ourselves and others by staying home. But that doesn’t mean that we suddenly know what we’re going to eat for lunch!! We’re still finding creative ways to use up the food we do have to make delicious and healthy lunches all from home. And adapting some of them so the kids will eat them too!

Get the Recipes

Roasted Broccoli salad with Cumin Lime Vinaigrette:
  • Arugula
  • Broccoli florets
  • Kale
  • Sliced cabbage
  • Protein source of choice
  • 1/4 tsp cumin
  • Pinch of salt
  • Pinch of pepper
  • 1/4 tsp garlic
  • 1/4 cup olive oil
  • 1/2 tbsp lime juice
  • Saute the broccoli, cabbage, kale and protein source with a little bit of oil and a pinch of salt until slight cooked.
  • Add the oil, seasonings and lime juice to a jar and shake until combined.
  • Serve over a bed of arugula and drizzle with the vinaigrette.
Butternut Squash Lentil Pasta:
  • Butternut squash
  • Butternut squash seeds
  • Coconut milk
  • Bone broth
  • Fresh cilantro
  • Lime Juice
  • Salt
  • Pepper
  • Cut the butternut squash long ways.
  • Scoop out the seeds and roast on a sheet pan with olive oil, salt and pepper for 15 minutes at 250 degrees.
  • Cook butternut squash on 400 for 40-45 minutes.
  • Cook pasta as indicated on box.
  • Once the squash is done cooking, scoop out as much squash as you can and add to a bowl. Make sure it is cooled enough so you don’t burn your hand.
  • Add coconut milk (or your favorite milk), broth (if you have it), lime juice and spices to the to butternut squash and smash with a fork.
  • Using an immersion blender or whisk, blend the butternut squash until smooth and creamy.
  • Add the butternut squash to the lentil noodles and top with fresh cilantro & the roasted seeds
  • Pair with a spinach salad, pickled onions, and jar-shaken salad dressing

Alane has kept her 40 lb weight loss off since 2013, and created BurgerFit and Cooking with My Friends as a way to get her family eating better. Her health journey started in 2012 after being diagnosed with high blood pressure and obesity. Frustrated and determined, Alane decided to make small, sustainable changes in her diet so that it would be maintainable for a lifetime. Now Alane maintains a healthy weight range and has incorporated quick and easy recipes that keep her picky family members eating better!

Stephanie Zarling

Certified Holistic Health Coach & Marketing Director BurgerFit

Pursuing a lifelong passion of health and wellness, Stephanie Zarling, FMCHC, became a Functional Medicine Certified Health Coach in February 2020. She is currently the Marketing Director for BurgerFit and enjoys incorporating her knowledge of health and nutrition into her everyday work.

How We Met

Oh man, I could go on for days about how amazing Stephanie is! I met Stephanie when she was working at a local restaurant that my husband and I eat lunch at often. She was always so friendly and took the time to remember our names and chat with us when we would come in. Eventually we hired her for our businesses, and she joined the BurgerFit team. She is working on getting her holistic health coaching certification (March 2020) so obviously loves cooking healthy and is also a singer and guitarist. She really can do it all! We love sharing healthy recipes with each other and trying each other’s lunches. It was a natural fit for us to host this show together.
