Sweet Potato Pancakes - Episode 2: What's In Our Pantry

What’s in our Pantry? During this season of social distancing, we are taking measures to protect ourselves and others by staying home. We’re still finding creative ways to use up the food we do have to make delicious and healthy lunches all from home.
 
These Sweet Potato Pancakes make for the easiest batch of sweet potatoes you’ll ever whip up! A great way to get extra veggies in your diet, too. Serve them just as you would normal pancakes – butter, maple syrup, cinnamon, berries or whipped cream!

Sweet Potato Pancakes
 
Ingredients:
  • 1-2 sweet potatoes, chopped and boiled
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 tbsp cinnamon
  • 2-4 eggs (depending on how much sweet potato you have)
  • 1/4-1/2 tsp baking soda – optional (add for a fluffier pancake!)
  • Cooking oil
  • Favorite breakfast meat (optional)
Instructions:
  1. Mash the boiled sweet potatoes in a bowl with a fork or potato masher, pulling out the skins as they come off.
  2. Add the salt, nutmeg, and cinnamon and mash together.
  3. Add the eggs and whisk together until combined.
  4. Heat a skillet on medium-high heat with cooking oil.
  5. Pour 1/4 cup of mixture onto the skillet and let cook for 1-2 minutes on eat side.
  6. Add a little more cooking oil to the pan in between cooking each pancake.
  7. Serve with your favorite breakfast meat, butter and maple syrup!
