You’ll love this bright, earthy, smooth gluten-free Beet Hummus Dip – it’s great with crudites or gluten-free crackers. Plus it’s the perfect way to get beets into your diet, especially if you’re not a huge fan of them.

Why eat the Beet Hummus Dip?

According to Healthline, beets are packed with essential vitamins, minerals, and plant compounds, some of which have medicinal properties. They are low in calories, yet high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need. Beets contain a high concentration of nitrates which have a blood pressure-lowering effect. This may lead to a reduced risk of heart attacks, heart failure, and stroke.

Ingredients

  • 2 cups cooked beets roasted or boiled
  • ¼ cup fresh lime juice
  • 1 tbsp ground cumin
  • 4 garlic cloves
  • 1 cup raw walnuts
  • cup olive oil
  • 1 tsp salt more to taste
  • water as needed for smooth consistency

Instructions

  • Blend everything in food processor until very smooth.
