Gluten-free Carrot Top & Cilantro Pesto
Summer is the perfect time to start experimenting with different pesto flavors! We are all familiar with a basil pesto, which is what is most commonly purchased at grocery stores, but did you know that pesto can be made with herbs other than basil? And they are absolutely fantastic!
When you have your core ingredients: olive oil, garlic, and nuts, you can really have fun with different herbs to pair with it! I remember my very first time branching out and making this gluten-free carrot top & cilantro pesto. I was so nervous about it! At the time, I wasn’t even sure if carrot tops were edible. It came out pretty good and we used it on grilled bratwursts at a Memorial Day party at my sister’s house. Since then, I’ve since gotten a lot more comfortable with making different pestos from scratch! The best thing about this specific recipe is that it is gluten-free, dairy-free, Paleo, Keto, Whole30, and AIP so it fits all dietary lifestyles!

Carrot Top & Cilantro Pesto

Ingredients

  • 1 bunch carrot greens
  • 1 bunch cilantro
  • 1 cup olive oil more if needed for consistency
  • ½ cup pine nuts can substitute with pecans and walnuts
  • 4 garlic cloves
  • salt to taste

Instructions

  • Put all ingredients into a food processor and blend until fully blended.
  • Store in a jar in the refrigerator
