Gluten-Free Matcha Energy Balls - Episode 6: What's in Our Pantry

What’s in our Pantry? Today it is easy, gluten-free Matcha Energy Balls! During this season of social distancing, we are taking measures to protect ourselves and others by staying home. But that doesn’t mean that we suddenly know what we’re going to eat for lunch!! We’re still finding creative ways to use up the food we do have to make delicious and healthy lunches all from home. And adapting some of them so the kids will eat them too!

Gluten-Free Matcha Energy Balls
I am obsessed with these Gluten-Free Matcha Energy Balls and so are my boys! I’ve just recently got back into making them again so we have healthy snacks around the house during Coronavirus. I am also trying to find variations to switch things up so we don’t get tired of eating the same flavors. On a whim, I threw some Teangle Matcha Tea in with my usual ingredients and created my newest favorite combo. Get the Matcha Energy Ball Recipe

Ingredients:
  • 1 1/2 tbsp Matcha powder
  • 1/2 cup almond butter
  • 4 tbsp almond flour
  • 2 tbsp chia seeds
  • 1/2 cup rolled oats
  • 2 tbsp maple syrup (more if you like them sweeter)
  • 1/2 cup coconut flakes

Instructions:

  1. Put everything in the food processor.
  2. Do a taste test before rolling into balls and make sure you don’t need to adjust.
  3. Roll into balls. If it is too wet to be able to roll into balls, add more oats. If it is too dry, add more almond butter.
