Gluten-Free Green Mango Coco Salad

Salad Ingredients
- 1 green mango julienned (or shredded)
- ½ red onion sliced thin
- ½ young coconut sliced into strips
- 1 red pepper julienned
- ½ cup cilantro roughly chopped
- 2 tbsp raw cashews chopped
Cashew Lime Dressing Ingredients
- 1 chiltepe chile or substitute Thai chile
- 2 garlic cloves
- ⅔ cup fresh lime juice
- 2 tbsp gluten-free tamari soy sauce
- ¼ cup maple syrup or agave
- ¼ cup olive oil
- ¼ cup water
- ⅓ cup cashews
Instructions
- Prepare all ingredients for the salad and mix together in a large bowl.
- To make the dressing, blend everything in a high-speed blender until smooth.
- Pour the desired amount of dressing onto salad and toss until well incorporated. Reserve the remaining dressing to use as a dip or dressing for another salad.
- Taste and adjust salt and lime if needed.

How We Met
You never know what chance of meeting you are going to have with someone amazing! I was getting ready for my spotlight author signing at the Nashville Health and Wellness Fest when this beauty showed up just a little early for her author signing. That beauty was Kassia! We exchanged brief introductions and information with each other and I quickly fell in love with what she does with her brand. I was so excited to shoot our first vegan episode with her and her plant-based approach to food!
This recipe reminds of the best days I had in El Salvador when one of the resort employees handed me this bowl of salad with almost the same ingredients that’s in this recipe. I couldn’t get enough of the flavor – it was so good and refreshing!! I couldn’t wait to make my own version of this salad!!
