This fresh Keto Watermelon Basil Salad is such a refreshing summer side dish that is just the thing to eat on a hot summer day! This recipe also makes for a fun way to use up all of that watermelon, and it’s low in Weight Watchers points. Even a small watermelon produces a lot of fruit after you cut it up so it is nice to find different ways to enjoy it and make it even more delectable than just eating it plain! Every summer we sign up for a CSA box from our local farm, Fall Creek Farms, and once August hits, we are delighted that our weekly box comes with a watermelon for several weeks!

My boys won’t eat this, Micah doesn’t like watermelon (he is crazy) and Fletcher doesn’t quite love basil yet, which means I get this dish all to myself! Fletcher is starting to come around though, now that we are growing basil in our garden, he loves going to pick a couple of leaves right off the plant and chow down on it. It will only be a matter of time before he is eating it in meals too. Baby steps! Until this, this gluten-free salad is for me to enjoy in our house.

Watermelon Basil Salad

Watermelon Basil Feta Salad is the perfect dish to use up the wonderful late summer produce that is coming in. The fresh, coolness of this salad will give you relief on those hot summer days.

Ingredients

  • 2 cups watermelon cubed
  • cup feta cheese
  • cup basil sliced

Instructions

  • Put all ingredients in a bowl and lightly toss to mix.

Notes

  1. Add a squeeze of lemon and drop of honey for extra flavor.
  2. Leave out feta cheese to make this recipe Paleo and Whole30.

    Quick tip for those who like to try this recipe – do not store if you plan to add honey or lemon or it will make an already watery salad more watery and soggy. Pour the lemon or honey on the watermelon salad just before serving.
