When I was preparing for a news segment covering healthy Super Bowl snack options, I was needing one more last-minute dish to display on air. The idea to make these BurgerFit Caprese Skewers came to me and I happened to have everything I needed to pull it off. As a true testament to this recipe, it came together in minutes and we were ready to go with a camera-ready, impressive and beautiful dish.

Why eat this recipe?

This is a great recipe to make when you don’t have a lot of time, but still want a nice dish to serve. This is one of my favorites because it’s a keto and gluten-free option, so it’s easy to share with your friends that follow similar dietary lifestyles!

BurgerFit Caprese Skewers

Caprese salads are timeless, and making them into skewers is a fun way to enjoy them! The addition of the BurgerFit burgers makes these super filling and a way to get extra veggies in. These BurgerFit skewers come together in minutes but are sure to impress when served!

Equipment

Bamboo Skewers
Cutting board
Knife
Serving dish

Ingredients

  • 8 oz cherry tomatoes
  • 8 oz mozzarella balls or slices cut into chunks
  • ¼ cup fresh basil leaves
  • 2 BurgerFit burger, cut into bite size pieces
  • Drizzle balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  • Alternate adding the cherry tomatoes, mozzarella balls, BurgerFit burger bites and basil leaves to the bamboo skewer until filled.
  • Lay onto serving tray and drizzle with balsamic reduction right before serving. Sprinkle lightly with salt and pepper if desired.

Notes

  1. Add whatever other veggies you might have on hand - cucumbers, bell peppers or even raw zucchini work great!
  2. If you don't have mozzarella cheese, use whatever block cheese you have.
  3. To make this recipe dairy-free, simply omit the cheese.
