The perfect use of your garden vegetables

My favorite part of summer is when my garden is booming with vegetables and herbs. But joy can quickly change to panic when thinking about how to use up all the beautiful produce! Cucumber Tomato salads are a popular summertime dish, but sometimes you want to jazz it up a bit! I love adding fresh basil from my garden to this gluten-free cucumber tomato salad recipe. Dill is another great herb to put into it if you have it! I make my own dressing to put on the salad and use the BurgerFit smoked salts to add amazing flavor to it. I also love julienning the cucumber instead of slicing it. It’s a great way to enjoy cucumbers other than the same old slices you typically see.
Even though I used the Dijon Koops’ Mustard in this recipe, you can experiment with any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:
  1. Spicy Brown Koops’ Mustard
  2. Stone Ground Koops’ Mustard
  3. Original Yellow Koops’ Mustard
  4. Honey Dijon Koops’ Mustard
 
I love eating BurgerFit burgers just right on top of this cucumber tomato salad but you can put the two together in other ways. My husband loves putting this combo in a tortilla and it would also be good in a bun or as a sandwich. I used the Zucchini Pesto BurgerFit burger in this recipe but a few other great BurgerFit recipes to pair with the cucumber tomato salad are:
  1. 4 Pepper Burger
  2. Brussels Sprouts Burger
  3. Sweet Potato Rosemary Burger
  4. Sun-dried Tomato & Artichoke Burger
  5. Greens, Beans, and Balsamic Burger

Cucumber Tomato Salad

If you are looking for an easy recipe for all of those cucumbers and tomatoes that are in season, this is the one for you! Making your own dressing for this salad gives you the ability to add any additional herbs and spices that you have on hand!

Equipment

Julienner
Large bowl
Mason jar
Tongs

Instructions

  • Heat BurgerFit burgers on medium heat in a skillet on the stove.
  • While burgers are heating, mix the olive oil, apple cider vinegar, and Dijion Koops' Mustard in a mason jar or bowl. Shake mason jar to mix.
  • Julienne cucumbers and chop tomatoes and place in a bowl. Pour as much dressing over it as you like and stir. Store any leftover dressing in the fridge. 
  • Serve on a plate with BurgerFit burgers.

Notes

  1. Add goat cheese or mozzarella if you eat dairy.
  2. Apple cider vinegar can be swapped out of for other vinegar you have.
This recipe is only dairy-free if you use a dairy-free pesto in the burger!
