Gluten-Free BurgerFit Mexican Casserole
I love easy, healthy meals and Mexican food. I feel that this Gluten-Free BurgerFit Mexican Casserole recipe is the perfect example of what my family and I love eating. I truly believe everything tastes better with a Mexican seasoning blend! To make this recipe paleo, Whole30, and keto, omit the black beans and cheese.

BurgerFit Mexican Casserole
Equipment
Ingredients
- 1 can diced tomatoes and green chilies
- 12 oz frozen cauliflower rice (or frozen if you prefer making it yourself)
- 1 tsp salt
- 1 tsp garlic
- 1 can black beans drained
- 2 tbsp chilli powder
- 1 tsp cayenne pepper (optional)
- 1 bundle collard greens
- 1/2 tbsp cumin
- 2-3 BurgerFit Burgers cut into bite-sized pieces
- 1 cup cheddar cheese grated
Instructions
- Add all ingredients except for cheese, BurgerFit burgers and cilantro to a baking dish and stir just until combined.
- Bake on 375 degrees for
25 minutes stirring halfway through. - Remove from oven. Sprinkle with cheese.
- Put back into oven for 5 more minutes to melt cheese and heat burgers.
- Remove from oven and top with fresh cilantro.

I changed this up a bit to get my kids to eat more. I used 1 tbsp of chilli powder, added 1/2 cup of sweet red pepper and 1/2 cup of black olives. It wasn’t spicy even after I added the cayenne pepper and I’m happy with that. I paired it with a bowl of rice and a scoop of sweet macaroni salad. No leftovers! I would give it 5 stars for this has been the easiest yet the tastiest Mexican casserole I have ever made.
