Just because you have a food intolerance or are trying to avoid common food allergens doesn’t mean you can’t enjoy tortillas! Cassava flour is gluten-free, dairy-free, nut-free, corn-free and is AIP friendly! That makes cassava flour a perfect addition to a kitchen where the eaters have some allergies or are trying to avoid certain foods. When made into tortillas, they have a very similar consistency to regular wheat tortillas. As amazing as these tortillas are, you want to eat them in moderation as they are high in carbohydrates.

I used mild cheddar and mozzarella and it turned out perfect. I also cooked the tortilla using 1 tbsp of melted butter to up the taste.
Thank you Sam. You may also consider mixing sharp cheddar and goat cheese, you will love it!
