Stephanie Zarling and her mom, Christine, created the Paleo Mustard Greens BurgerFit burger for me to try. They actually had no idea I didn’t like mustard greens. I ate it for lunch with an open mind on a salad. It was absolutely delicious, and I couldn’t taste that pungent mustard green taste in it at all! I actually went back for seconds.

Mustard greens are peppery-tasting greens that come from the mustard plant. According to Healthline, mustard greens are one of the most nutritious foods you can eat, as they are low in calories yet high in fiber and many essential vitamins and minerals. Mustard greens are rich in important plant compounds and micronutrients, specifically vitamins A, C, and K. As a result, eating them may have benefits for eye and heart health, as well as anticancer and immune-boosting properties.

Mustard Greens BurgerFit Burger

Ingredients

Instructions

  • Heat a skillet on medium heat with 1 tablespoon cooking fat. Dice 1/2 onion and add to skillet. Sauté until translucent.
  • Rough chop the mustard greens and add to onions with 1/2 teaspoon salt and balsamic vinegar. Cook until greens have cooked down. Remove from heat and let cool.
  • In a large bowl, add the ground meat and remaining 1 teaspoon salt. Gradually incorporate vegetable mixture into the ground meat. Add as much as you can while still being able to form your burgers as normal. (If you end up adding too much vegetable mixture, don’t worry! Just form your burgers and cook in the oven for 20 minutes at 350 degrees).
  • Cook burgers on medium heat on the stove for 3-5 minutes each side or to your preference. Cooking times can vary.

    Got mustard greens from the farmers market and I made this recipe and it’s a keeper! I added 1/2 cup of spinach and the blend of flavor from the meat and greens was absolutely perfect. Great addition to my list of healthy yet affordable recipes.
