Thai Coconut Soup
Equipment
Ingredients
- 4 cups Chicken or turkey broth
- 1 can Coconut milk
- 1 tbsp Curry powder
- 1 tsp Ginger powder
- 1 Green onion
- 2 cups Spinach chopped
- 2 cups Mushrooms I prefer shiitake, but any type will work
- 1 tsp Salt
- 1 tbsp Coconut aminos
- 2 tbsp Siracha chili sauce optional
- ¼ cup Cilantro chopped
- 1-4 BurgerFit burgers chopped
Instructions
- Combine everything except the cilantro in a pot, and cook on medium heat for 15 minutes.
- For added flavor, let simmer on low heat for an additional 15-20 minutes.
- Serve with chopped cilantro on top.
Notes
- Double-check that your coconut milk and sriracha chili sauce are paleo-friendly.
- Make it AIP by using an AIP-friendly curry powder and sriracha chili sauce.
