Gluten-Free Cumin Lime Dressing
Easy & healthy Gluten-Free Cumin Lime dressing is made in under 5 minutes all in one mason jar! When I started to transition to healthier eating, I ate a lot of salads. They are great for getting a lot of veggies and fruits into your diet, but it’s easy to quickly grow tired of them especially if you’re using the same toppings all week! One of the best ways I’ve found to combat the classic salad slump is by changing up your salad dressing! By doing this, you can create totally different flavor combinations with the same greens and whatever veggies you’re using. I love the freshness of this one with the fresh cilantro leaves.
I can even get Fletcher, my 5-year-old, picky eater to eat a meal with this dressing! We grew cilantro in our garden all spring and summer and I tried to involve him in the gardening process as much as I could. By the end of the summer, he was picking cilantro leaves right off the stem in the garden and eating it! This has helped him transition to eating it on his meals too. If your kiddos will point out the pieces of green cilantro in the dressing and refuse to eat it, try blending this dressing using an immersion blender to get one uniform color and texture.
This cumin lime dressing isn’t just for salads! It can also make a fantastic marinade. I’m currently marinating chicken wings in it to throw on the grill tonight!
“This gluten-free cilantro lime dressing is everything you ever needed on your salad (and everything else).” – Alane
