I tried to keep the ingredient list simple, but you could continue adding other vegetables to this stew such as lima beans, cauliflower, kohlrabi, etc.

Simple Ingredient Beef Stew

Ingredients

  • 1 tbsp cooking fat
  • 1 onion chopped
  • cup red wine optional (but highly reccommended)
  • 64 oz chicken or beef broth
  • ¼ cup tomato paste
  • 3 carrots sliced
  • 1 cup peas frozen or canned
  • 2 potatoes chopped
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic
  • 1 tsp paprika
  • 2 bay leaves
  • 4 oz noodles
  • 3-4 BurgerFit burgers chopped

Instructions

  • In a large pot, add cooking fat and onions, and saute  on medium-high heat until onions are browned, approximately 3-4 minutes.
  • Add red wine and cook for 2 minutes (be careful not to let the onions burn). Turn down the heat if needed.
  • Add the remaining ingredients except noodles and BurgerFit burgers. Turn down the heat to medium and stir.
  • Simmer for 30 minutes, stirring occasionally. Turn down the heat if broth begins to boil.
  • Add BurgerFit burgers and cook for 3-5 minutes to heat burgers and cook noodles.

Notes

Our favorite BurgerFit burgers for this recipe:
 
  1. Make it paleo by omitting the potatoes and using a paleo-friendly pasta.
  2. Make it Whole30 by omitting the red wine and using Whole30 compliant noodles like zucchini or sweet potato noodles.
  3. Make it gluten-free by using gluten-free noodles.
