Simple Ingredient Beef Stew

Ingredients
- 1 tbsp cooking fat
- 1 onion chopped
- ⅛ cup red wine optional (but highly reccommended)
- 64 oz chicken or beef broth
- ¼ cup tomato paste
- 3 carrots sliced
- 1 cup peas frozen or canned
- 2 potatoes chopped
- 2 tsp salt
- 1 tsp pepper
- 2 tsp garlic
- 1 tsp paprika
- 2 bay leaves
- 4 oz noodles
- 3-4 BurgerFit burgers chopped
Instructions
- In a large pot, add cooking fat and onions, and saute on medium-high heat until onions are browned, approximately 3-4 minutes.
- Add red wine and cook for 2 minutes (be careful not to let the onions burn). Turn down the heat if needed.
- Add the remaining ingredients except noodles and BurgerFit burgers. Turn down the heat to medium and stir.
- Simmer for 30 minutes, stirring occasionally. Turn down the heat if broth begins to boil.
- Add BurgerFit burgers and cook for 3-5 minutes to heat burgers and cook noodles.
Notes
- Make it paleo by omitting the potatoes and using a paleo-friendly pasta.
- Make it Whole30 by omitting the red wine and using Whole30 compliant noodles like zucchini or sweet potato noodles.
- Make it gluten-free by using gluten-free noodles.
