The perfect way to use holiday leftovers
These keto, gluten-free, dairy-free, Whole30, Paleo Brussels Sprout Turkey BurgerFit patties will make anyone a brussels sprout lover, whether they know it or not! I love baking a whole chicken each week and throwing it in salads and other meals but also, love using some to make these patties. It’s the perfect way to use your turkey and baked chicken leftovers, especially when you need something new. If you’ve just celebrated a holiday and have a ton of leftover turkey, it can be hard to figure out what to make after you’ve already eaten enough for the year, but what do you besides just freezing it? Answer: make these leftover turkey patties! You will be a superhero in your house for it – trust us! It is also a great way to use any leftover veggies, especially for those that are picky eaters! They will have no idea they are eating brussels sprouts. It is a perfect way to get those in, and they will have your family eating healthier.
I love eating my paleo brussels sprout turkey BurgerFit patties over a green salad with one of my jar shaken dressing recipes. My husband loves eating his with a side of veggies and my 5-year-old loves eating his with a side of pickles and mustard. There are so many ways you can serve these and they all turn out amazing!
This recipe was made with both leftovers from my favorite Glazed Brussels Sprout recipe and leftover turkey but you can use any leftover brussels sprouts you have or make it fresh!
When I cook these patties in the skillet, I usually use leftover bacon fat from cooking the bacon but you can easily use any cooking fat that you prefer to cook with: olive oil, coconut oil, avocado oil, rendered lard, tallow, etc.
If you prefer, you can also cook these in the oven until golden brown on top and cooked all the way through.
Even though I used the Koops’ Spicy Brown Mustard, you can use almost any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:

BurgerFit Brussels Sprout Turkey Patties
Equipment
Ingredients
- ½ cup Brussels sprouts cooked
- 1 cup turkey cooked (white or dark meat work great!)
- 1 egg
- 1 tbsp Koops' Spicy Brown Mustard
- 1 garlic clove
- ⅛ cup coconut flour
- ¼ cup bacon cooked (optional)
- 4 tbsp cooking fat divided
Instructions
- In the food processor, add 2 tbsp of cooking fat and leave the other 2 for cooking the patties. Use the pulse button to chop and blend the ingredients without making it a puree.
- Heat skillet on medium heat and add cooking fat.
- Form into 4 equal patties and place patties on hot skillet.
- Cook for 4-5 minutes on each side or until fully cooked and browned on both sides.
Notes
- This recipe also works great for substituting turkey with chicken.
- You can use any of your favorite cooking oils, like olive oil, coconut oil, avocado oil, rendered lard, tallow, etc.

My mom taught me a few different ways on how to cook brussels sprout and I would say this one is now on our list to try. I remember doing patties with brussels sprout but we used ground beef and added 1 cup of chopped carrots. I am truly excited for us to make this one.
