This gluten-free Southwest Rice Bowl recipe is one of my go-to’s for busy nights. I always keep cauliflower rice and BurgerFit burgers in my freezer and canned black beans in my pantry. That way, I can quickly throw a healthy dinner together in minutes! I’ll also add greens, cooked veggies, and fresh cilantro if I have any. This is one of Fletcher’s favorite meals – he is always asking me for rice and beans. He has no idea that he is actually eating cauliflower instead of rice and veggies in his burgers!

Why eat the Gluten-Free Southwest Rice Bowl?

The Southwest Rice Bowl is your go-to dish for sneaking in extra veggies. You can use cauliflower instead of rice, add peppers, onions, tomatoes, sweet potatoes, or anything else you have. Once you have the extra toppings on there like cheese, sour cream, salsa and/or hot sauce, picky eaters won’t be able to tell the difference!

Gluten-Free Southwest Rice Bowl

This recipe is one of my busy night go-tos. I keep cauliflower rice and BurgerFit burgers always in my freezer and canned black beans in my pantry. With always having these handy, I can throw together a healthy dinner in minutes. I can also throw in greens, cooked veggies, and fresh cilantro if I have any. This is also one of Fletcher’s favorite meals, he is always asking me for rice and beans. He has no idea that he is actually eating cauliflower or veggies in his burgers.

Ingredients

Topping Ideas

  • Pico de gallo or salsa
  • Sour cream or plain greek yogurt
  • Shredded cheese
  • Cilantro

Instructions

  • Heat a skillet on medium heat with 1 tsp cooking fat.
  • Add the cauliflower rice to the skillet and cook 3-4 minutes or until heated. 
  • Add salt, cumin, paprika, garlic, and stir. Add black beans and BurgerFit burger, and cook until heated thoroughly. 
  • Add your favorite toppings.
