This recipe was a last-minute creation while prepping for a TV news station segment. We had planned on creating our Un-lasagna recipe but realized after already getting into the kitchen to prep that we forgot to purchase the eggplant! Kind of hard to make those if there is no base to hold it all together… But then we looked at our vegetable inventory and saw the sweet potatoes lying there, waiting to be used! Once these gluten-free sweet potato bites were made, we each planned to eat one in order to test them out. That didn’t happen: We wound up eating several and had to cut ourselves off so we would have enough for TV!

Sweet Potato Toast Bites

Equipment

Ingredients

  • 1 Sweet potato sliced into medallions
  • 1 tbsp Cooking fat
  • 1 Jalapeño sliced (optional)
  • Salt and pepper to taste
  • 1 BurgerFit burger broken into bite-size pieces
  • Feta cheese to taste
  • ¼ cup Koops' Jalapeno Mustard

Instructions

  • Preheat oven to 425 degrees.
  • Cut sweet potato into about ¼” slices and place them on a baking sheet.
  • Lightly brush each one with cooking fat, and sprinkle with salt and pepper.
  • Bake in the oven for 15 minutes.
  • Remove from oven and layer each slice with BurgerFit burgers, jalapenos, and feta cheese.
  • Return to the oven for about 5 minutes until everything is warmed.
