I do not like wasting food so I’m always looking for ways to recreate our leftovers so we don’t get sick of eating the same thing for several days. Well, I am excited to tell you, you are no longer stuck to having to make turkey sandwiches every day for a week, freeze your leftover turkey, or having to make turkey soup. You can now add these turkey BurgerFit patties into your leftover turkey recipe rotation! You can also use leftover baked or boiled chicken in place of the turkey. I love making chicken soup but I don’t use all the boiled chicken in the soup, I always have some leftover. This is the perfect way to use it!

It is also a great way to use up those leftover vegetables in a new way for those picky eaters or to just keep things interesting for your tastebuds. This recipe was made with both leftovers from my favorite Glazed Carrot recipe and leftover turkey. You can use any cooked carrots you have for it though!

They are so delicious! They are also extremely versatile – serve them with a salad or in a pita or sandwich or simply have them with a couple of vegetable sides. Your picky eaters will have no idea they are eating carrots (and loving them!)

These remind me of the fried chicken patties I use to eat as a kid or the vegan ones that my husband and I were obsessed with when we first started dating. My favorite way to eat these is over a salad with a drizzle of Arizona Heat Koops’ Mustard over it and a scoop of my Keto Beet Kraut or Dill Garlic Kraut.

When I cook these patties in the skillet, I usually use leftover bacon fat from cooking the bacon but you can easily use any cooking fat that you prefer to cook with: coconut oil, avocado oil, rendered lard, tallow, etc.

Even though I used the Koops’ Honey Mustard, you can use almost any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:

Food processor
Measuring spoons

Ingredients

Instructions

  • In the food processor, add 2 tbsp of cooking fat and leave the other 2 for cooking the patties. Use the pulse button to chop and blend the ingredients without making it a puree.
  • Heat skillet on medium heat and add cooking fat.
  • Form into 4 equal patties and place patties on hot skillet.
  • Cook for 4-5 minutes on each side or until fully cooked and browned on both sides.

  • This recipe also works great for substituting turkey with chicken.
  • You can use any of your favorite cooking oils, like olive oil, coconut oil, avocado oil, rendered lard, tallow, etc.

    I used to make the meat ball version of this recipe and I remember adding soy sauce, celery and cabbage to the meat and my entire family loved it. I’ll try to revisit that recipe again and incorporate some of these ingredients here.
