Roasted Butternut Squash with Dill & Feta
This amazing gluten-free Roasted Butternut Squash with Dill & Feta recipe could not be any easier to make and it is so delicious! It only calls for four ingredients: butternut squash, salt, dill, and feta cheese. The only time-consuming part is peeling the skin off of the butternut squash!
When I lived in San Diego, CA, I didn’t get the chance to fly home to Louisiana for every holiday, so I usually chose Christmas over Thanksgiving. One particular Thanksgiving my husband and I went over to one of our friend’s houses to spend it with her family that was coming into town. She was a very healthy eater and we didn’t see the usual (and very delicious) Au gratin potatoes, sweet potato casserole with brown sugar and marshmallows, and dips and chips that were so common at my Louisiana Thanksgivings growing up. Instead, her spread was full of roasted vegetables and hummus with carrots! One of her dishes was made with butternut squash, feta & dill and was amazing! The flavor combo was so delicious that I recreated a version of this Roasted Butternut Squash with Dill & Feta recipe to share with you all.
Having spent that particular Thanksgiving away from home was a great chance to try something new and learn from another healthy eater. This is ultimately why I decided to start Cooking with My Friends, so we can all continue to learn together! Watch the first season of Cooking with My Friends.

Butternut Squash, Dill, and Feta
Equipment
Ingredients
- 1 butternut squash
- 1 tbsp cooking fat coconut oil, olive oil, lard
- 2 tbsp dried dill
- ½ cup feta crumbled
- Salt to taste
Instructions
- Preheat oven to 400 degrees.
- Remove the butternut squash stem and discard.
- Using a vegetable peeler or knife, remove the skin from the outside of the butternut squash.
- Cut the squash lengthwise. Scoop out the seeds and discard.
- Cut into 1/2 inch cubes.
- Add cubed butternut squash to baking sheet and coat with cooking fat of choice. Sprinkle with salt and pepper.
- Cook in the oven for 20-30 minutes, or until tender when pierced with a fork.
- Add cubes to serving dish and add the dill and feta. Toss to mix and serve.
