Homemade Paleo and Whole30 Blueberry Breakfast Sausage – just ground pork, a few spices, and fresh blueberries make an easy, no sugar added Paleo and Whole30 approved breakfast side!
Have you ever been to Whole Foods and noticed the blueberry sausage you can buy in the meat section? At first, I thought it was a crazy concept but after seeing it a few times, I finally decided I should try it just to see what it tasted like. I am so glad I did because turns out, blueberries with sausage is an AMAZING combo! It has been a while since I have made it to Whole Foods because the closest one is an hour and a half away from where I live so I decided to recreate it on my own. Whole Foods included maple syrup and brown sugar in their recipe but I leave out the additional sweeteners.
These are a little sweet from the blueberries and a little savory making them the perfect accompaniment to any breakfast.
Making sausage yourself is really easy and how I most often eat breakfast sausage. So much of what you buy at the store or even at the farmers market is loaded with sugar and chemical additives. I always make them in patty form and not link form but no one cares as they are devouring them. To make them, all you need is some ground meat and spices/seasonings, most of which you probably already have in your spice cabinet. Here is what you will need to make the Whole30 blueberry breakfast sausage:
  1. ground pork
  2. garlic powder
  3. paprika
  4. cinnamon
  5. rosemary
  6. fresh blueberries
  7. salt and pepper

Blueberry Breakfast Sausage

These homemade Paleo and Whole30 Blueberry Breakfast Sausages only take a few ingredients and minutes to prepare. All you need is ground pork, a few spices, and fresh blueberries! They make an easy, no sugar added Paleo and Whole30 approved breakfast side!

Ingredients

Instructions

  • Heat a skillet on medium heat.
  • Combine the pork and spices in a bowl.
  • After fully mixed, add in the blueberries carefully so that you don't pop them. If they don't all mix in, in this step, don't worry.
  • Form your sausages into patties and press a few of the loose blueberries into the patty.
  • Place patties on hot skillet.
  • Cook for 4-5 minutes per side until browned and cooked through. Larger patties will need a longer cooking time to cook all the way through.

Notes

  1. Add 2 tbsp maple syrup for a sweet breakfast sausage
  2. You don't have to limit this to just breakfast! These make great compliments to salads for lunch and dinner.

    This is the best recipe for blueberry sausage I have tried! Great blend of spices – the garlic powder, paprika, cinnamon and dried rosemary they all helped with the flavor. I used ground beef instead of pork and it was really tasty. I will definitely be making these again with ground pork with a little bit of fat!
