My favorite way to eat carrots
I like carrots, and I’ll eat them, but I’ve had to find ways to prepare them in a way that I really like them! For some reason, I’m not a big fan of that big crunch when you bite into carrots raw, so if I’m eating them over a salad, I always julienne them! When experimenting with creating dishes with Koops’ Mustard, I created this glaze that I was adding to roasting vegetables and knew I had to try it with carrots! Sure enough, it’s a delicious combo and makes me love carrots prepared this way!
This recipe is gluten-free, dairy-free, and Paleo making it great for whatever dietary lifestyle you might be on. Gluten-free glazed carrots are super easy to prepare and most of the cooking time is time in the oven! I love how versatile this dish is too, it makes for the perfect side dish for dinner the day I make it, but the leftovers are amazing too! I’ll add leftovers to my salads, or turn them into my favorite turkey patties like the Carrot Turkey BurgerFit patty! I’ve added these to a wrap for Fletcher with hummus and chicken and he absolutely loves it. So get creative and don’t just serve these for dinner one night!

Glazed Carrots
Equipment
Ingredients
- 2 cups carrots peeled and cut into matchsticks
- 3 tbsp balsamic vinegar
- 1 tbsp pure maple syrup
- 2 tbsp Dijon Koops' Mustard
- 1 tbsp cooking fat (olive oil, coconut oil, avocado oil, etc.)
- ½ tsp dried thyme
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven at 425 degrees.
- Place halved carrots on a baking sheet.
- In a mixing bowl or mason jar add all ingredients except the carrots and mix till combined. Pour over carrots on a baking sheet and toss lightly to coat in glaze.
- Bake in oven for 20 minutes.
- Remove from oven and move everything to a serving dish.
- Add additional salt and pepper to taste if needed.

I would like my carrots to still be crunchy, what is the recommended cooking time and temperature to achieve this?
Hi Geraldine. I would recommend placing the carrots in the oven in less than 20 minutes at 425 degrees.
