A healthy version of green bean casserole

This glazed green bean recipe is great for using all those green beans that may be coming in from your summer garden or as a healthy replacement from the beloved green bean casserole dish at Thanksgiving dinner! It’s easy, gluten-free, paleo, dairy-free!

Typically at every Thanksgiving, I would bring the green bean casserole to my family gatherings, but after changing my diet, it no longer fit within my lifestyle. I needed a new go-to! This gluten-free glazed green beans recipe with dill is my new favorite and a go-to recipe for holidays.

Even though I used the Koops’ Spicy Brown Mustard in this recipe, you can experiment with any of the Koops’ Mustards! The spice in this mustard is not overpowering so it does not make a spicy dish at all. Some other ones that I think would be great in this recipe are:

  1. Jalapeno Koops’ Mustard
  2. Yellow Koops’ Mustard
  3. Dijon Koops’ Mustard
  4. Stone Ground Koops’ Mustard

A few substitution ideas:

  • You can easily replace the honey with maple syrup.
  • If you have fresh dill, use it instead of the dried dill! But use two to three times more if using fresh.
  • You can use any of your favorite oils, like coconut oil, avocado oil, rendered lard, tallow, etc.

Glazed Green Beans

Medium bowl
Stirring spoon
Measuring spoons
Baking sheet

Ingredients

Instructions

  • Preheat oven to 425 degrees.
  • Slice onion into half-moons and trim ends off green beans.
  • Place both on a baking sheet, drizzle with olive oil, and sprinkle salt and pepper to taste.
  • Bake in oven for 10 minutes.
  • While beans and onions are roasting, mix together the remaining ingredients.
  • Remove green beans and onions from oven after ten minutes and coat with the desired amount of mixture, you do not have to use all of it if you feel it is excessive.
  • Return to oven for another 10 minutes or until desired texture, watching that the green beans do not burn. You want the mixture to become caramelized on the baking sheet.

    I love all the healthy food options that were presented here but one that really stood out for me is this recipe. The mustard mixture has really add to the flavor big time and I would also suggest incorporating 1/2 tablespoon of minced garlic for enhanced Aroma.
