Healthy, creamy keto lime & cilantro dressing perfect for salads, burgers, wraps, or sandwiches!
As fall is rapidly approaching, I’m holding onto the last few moments of summer by whipping up a few more summer recipes! I had some avocado and cilantro on hand (along with my usual pantry and fridge staples for dressings) and I don’t think there is a better combo than that!
I recently saw where someone used an immersion blender right in a wide-mouth mason jar to create an easy salad dressing. If you know me, you know how much I love jar-shaken salad dressings! Creating them right in the jar reduces the number of dishes you use, and it doubles as a serving and store container! But jar-shaken dressings are really only good for recipes that have more liquid ingredients that can easily be shaken together. So if you want to use some whole ingredients in your dressing? Use an immersion blender! By blending it right up in the wide-mouth mason jar, you’re still cutting down on dishes, the immersion blender stick is the only extra dish you need to wash.
I love how creamy this dressing turned out with the avocado! It’s a great source of healthy fats along with the olive oil. The lime and Jalapeno Koops’ Mustard gives it the perfect amount of tang and kick! It was delicious on my salad with greens, veggies, BurgerFit burger, and SunGarden sprouts, but my son and husband also loved it as a spread on their wrap with the BurgerFit and sprouts!
Trying to get kids to eat vegetables can be really difficult and that is why I love this dressing that sneaks in avocado and cilantro. With it all blended together, kids have no idea they’re eating veggies! Then when you include a BurgerFit burger that has veggies cooked in, you have a veggie-packed meal that your kids are loving. Including sprouts in your meal can also be a win for getting a kid to eat vegetables. A sprout is a lot less intimidating to try than a whole vegetable. Sprouts are cute and fun and they make kids curious. Plus, sprouts have such a concentrated amount of nutrients that you don’t have to worry about your kids not getting their vitamins and minerals – a small portion of sprouts will have them covered!
Make your BurgerFit burgers with ground chicken, pork, or turkey! It doesn’t just have to be ground beef!
If you need to tone down the spice of this dressing, use a different mustard than the Jalapeno Koops’ Mustard! You can experiment with any of the Koops’ Mustards.

What I love about BurgerFit burgers is that the flavors are neutral enough that they’ll pair great with anything! But they’ll also be delicious if you want to match flavors. If I was trying to match flavors, I’d go with the 4 pepper burger to serve with this lime + cilantro dressing. The peppers in the burger would be delicious with the Mexican flavors of the dressing. But this dressing would be delicious with any of our BurgerFit burgers. Here are a few that I think would be great with it:

Lime & Cilantro Dressing
Equipment
Ingredients
- ¼ cup cilantro leaves (to preference)
- 1 tbsp Koops' Jalapeno Mustard or use your favorite!
- 2 tbsp balsamic vinegar
- ½ cup extra virgin olive oil
- 1-2 garlic cloves minced
- 1 avocado
- 3 tbsp lime juice (about 1 lime)
- 1 tsp lime zest (about 1 lime)
- 1 tbsp onion powder
- Salt to taste
- Pepper to taste
Instructions
- Cut open the avocado and remove the pit.
- Scoop into a large, wide-mouth mason jar.
- Add in the rest of the ingredients.
- Using an immersion blender, blend the ingredients together in the jar until combined.
- Taste for salt and pepper and add more if desired.
- Top with a lid and store in the fridge until you're ready to use it.
- Drizzle over your summer-time salad and top with SunGarden's Alfalfa Sprouts!
Notes
- Swap out the Koops' Jalapeno Mustard for Koops' Mustard Honey Dijon for a sweeter and less spicy version!
- Keto-friendly with avocado's healthy fats.
- Try blending in sunflower seeds for extra nutrients.
- Substitute coconut oil or avocado oil in place of olive oil if needed.
- Use as a chip dip or a sandwich spread!
