Chia seed pudding may be one of the easiest and healthiest breakfast meals you can make! It’s as simple as adding your favorite dairy-free milk to chia seeds and stirring. Then just sit back and watch the magic happen! I love making this the night before so that way in the morning, I have a quick and healthy breakfast at my fingertips! It’s so easy that it’s a great way to get my 5-year-old in the kitchen. He can pretty make the entire recipe himself! He can measure the ingredients, pour the milk into chia seeds and stir. I love the sense of pride and accomplishment he has when he makes his own meals. I think it’s so important to involve kids in the kitchen. I talk about this a lot, but back to the chia seed pudding for now!

Chia seed pudding is also so versatile – when you start with chia seeds and dairy-free milk, you essentially have a blank canvas that you can do anything with! I love adding lemon juice and vanilla to mine as indicated in this recipe, but get creative! You can use different dairy-free kinds of milk like coconut milk, almond milk, or cashew milk. Squeeze a fresh lemon or orange into the pudding and top with berries, almond butter, nuts, or coconut flakes! You can also layer your chia seed pudding for beautiful and delicious variations (make sure to use a clear jar so you can see your beautiful creation!). Start with a fruit puree, whole fruit, coconut whip, or nut butter. Then add your chia seed pudding, then add your toppings. You’ll easily have a different breakfast variation for each day of the week.

Ingredients

Instructions

  • Add all ingredient except chia seeds to a food processor and blend until fully combined.
  • Pour mixture into a food storage container and stir in chia seeds until fully stirred in.
  • Place in refrigerator for a minimum of 1 hour but overnight is recommended.
  • Stir well before serving.
  • Top with fresh or dried fruit, nut butter, chopped nuts and seeds.
