The perfect way to sneak in veggies
These gluten-free, dairy-free, Paleo, and Whole30 leftover Collard Green Turkey BurgerFit patties are absolutely the perfect way to use those turkey and baked chicken leftovers! You are no longer stuck to having to freeze your leftover turkey or having to make turkey soup. These are so delicious that you’ll probably end up making these a part of your regular meal rotation – we definitely have!
They are so delicious! They are versatile when serving, whether using them with a salad or serving them in a pita or sandwich or simply having them with a couple of vegetable sides. Not only is it a great way to use up leftover turkey or baked chicken, but it is also a great way to sneak in those veggies for the picky eaters! They will have no idea they are eating collard greens (and loving them!)
It is also a great way to use up those leftover vegetables in a new way. This recipe was made with both leftovers from my favorite Braised Collard Greens recipe and leftover turkey.
These remind me of the fried chicken patties I use to eat as a kid or the vegan ones that my husband and I were obsessed with when we first started dating. My favorite way to eat these is over a salad with a drizzle of Arizona Heat Koops’ Mustard over it and my Keto Beet Kraut or Dill Garlic Kraut. I’m getting hungry just thinking about it!
When I cook these patties in the skillet, I usually use leftover bacon fat from cooking the bacon but you can easily use any cooking fat that you prefer to cook with: coconut oil, avocado oil, rendered lard, tallow, etc.
Even though I used the Koops’ Jalapeno Mustard, you can use almost any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:

Use the purse setting as directed to prevent the ingredients from getting juiced. The ingredients should be thoroughly mixed in less than a minute. Also, I added half-cut of small red onion and 1 tsp of black pepper to up the taste. The patties turned out perfect!
So glad the recipe turned out great for you, Simone! Thanks for sharing!
