A healthy version of green bean casserole
This easy, gluten-free, paleo, dairy-free Glazed Green Bean recipe and Beans, Greens & Balsamic BurgerFit recipe is great for using all those green beans that may be coming in from your summer garden!
You can eat the glazed green beans as a side dish or throw them on top of a bed of greens like I did. I love adding cooked veggies to my salads to keep them interesting to my tastebuds. I also had a little trail mix made out of mixed seeds, nuts, and dried fruit that I added on top. Everything blended together deliciously!
If your kids won’t eat green beans or a salad (if they do, share your tips with us!), trying making the green bean BurgerFit burger! It’s a ground meat burger blended with cooked green beans and collard greens to get a serving of veggies into your kid’s meal whether they know it or not! Since they taste like a regular burger, you can serve it like you would a traditional burger with a bun and cheese, or serve it on the side with some of the green beans!
Kids (and picky adults) won’t even know they are eating vegetables and they will be loving it! Serving sprouts (which I love adding to this recipe!) can also be a win for getting a kid to eat vegetables. A sprout is a lot less intimidating to try than a whole vegetable. Sprouts are cute and fun and they make kids curious. Plus, sprouts have such a concentrated amount of nutrients that you don’t have to worry about your kids not getting their vitamins and minerals – a small portion of sprouts will have them covered!
A few substitution ideas:
- You can easily replace the honey with maple syrup.
- If you have fresh dill, use it instead of the dried dill! But use two to three times more if using fresh.
- You can use any of your favorite oils, like coconut oil, avocado oil, rendered lard, tallow, etc.
This burger doesn’t have to be made with ground beef, it can easily be substituted with your favorite type of ground meat like ground chicken, pork, and turkey.
When cooking the green beans and greens for the BurgerFit burgers, I used coconut oil but you could use any cooking fat that you prefer to cook with: olive oil, avocado oil, lard, tallow, etc.
Even though I used the Stone Ground Koops’ Mustard in this recipe, you can experiment with any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:
I used the Broccoli and Clover Sprouts on top of this burger but any of them would b delicious! Some other SunGarden sprouts options that I think would be great on this burger are:

My favorite way to eat this burger is over a bed of greens with sprouts and mustard on top. I usually don’t even use a salad dressing and use the mustard as if it were one. If I decide I want a little dressing, I’ll usually whip up one of my favorite ones. My boys (my husband and son) always love making a traditional burger with a bun, pickles, and cheese. Glazed Green Beans
Equipment
Ingredients
- ½ lb fresh green beans
- 1 onion (brown or red)
- 2 tbsp olive oil
- 2 tbsp Koops' Spicy Brown Mustard
- 2 tbsp honey
- 1 tsp dried dill
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Slice onion into half-moons and trim ends off green beans.
- Place both on a baking sheet, drizzle with olive oil, and sprinkle salt and pepper to taste.
- Bake in oven for 10 minutes.
- While beans and onions are roasting, mix together the remaining ingredients.
- Remove green beans and onions from oven after ten minutes and coat with the desired amount of mixture, you do not have to use all of it if you feel it is excessive.
- Return to oven for another 10 minutes or until desired texture, watching that the green beans do not burn. You want the mixture to become caramelized on the baking sheet.

Green Beans, Collard Greens & Balsamic Vinegar Burger
Equipment
Ingredients
- 1 tablespoon cooking fat
- 1 bunch collard greens
- 1 10 oz bag of frozen or canned green beans
- 1 1/2 teaspoons salt divided
- 2 cloves garlic
- 2 teaspoons balsamic vinegar divided
- 1 lb ground meat
- SunGarden Broccoli and Clover Blend or use your favorite!
Instructions
- Heat a skillet on medium heat with 1 tablespoon cooking fat. Remove stems and rough chop the collard greens. Sauté the greens and green beans with ½ teaspoon salt and 1 teaspoon of balsamic vinegar until soft, about 5 minutes.
- Once the greens and green beans are cooked, add the greens, green beans, and garlic to the food processor (or finely chop). Let the mixture cool completely.
- In a large bowl, add the ground meat, remaining 1 teaspoon salt, and 1 teaspoon balsamic vinegar. Gradually incorporate vegetable mixture into the ground meat. Add as much as you can while still being able to form your burgers as normal.*If you end up adding too much vegetable mixture, don’t worry! Just form your burgers and cook in the oven for 20 minutes at 350 degrees.
- Cook burgers on medium heat on the stove for 3-5 minutes each side or to your preference. Cooking times can vary.
- Optional: Serve with a side of green beans over collard greens and top with SunGarden Sprouts!
