Gluten-Free BurgerFit "Sushi Roll"

Not-your-typical sushi, I got the idea for this gluten-free BurgerFit sushi roll from The Cardamom when she posted a recipe for strawberry banana “sushi rolls.” I used the Cassava & Chia Siete tortillas to create these with Koops Mustard and SunGarden sprouts and pickles! It made for a fun meal for my son – even my husband loved them! To make this gluten-free BurgerFit sushi roll, all I do is make up a BurgerFit burrito and then cut it into 4 or 5 pieces to create the “sushi rolls”. Super easy!

We love eating these gluten-free BurgerFit sushi rolls with chopsticks! We actually eat with chopsticks quite a bit at home, and I’ve found that it’s a great way to encourage mindful eating! These were the perfect meal to eat with chopsticks.

Trying to get kids to eat vegetables can be really difficult and that is why I love the Asian BurgerFit burger! The veggies in this burger seamlessly blend in with ground meat to where kids (and picky adults) won’t even know they are eating vegetables and they will be loving it! I love including sprouts in my recipes because a sprout is a lot less intimidating to try than a whole vegetable. Using sprouts can be a win for getting a kid to eat vegetables! They are cute and fun and they make kids curious. Plus, sprouts have such a concentrated amount of nutrients that you don’t have to worry about your kids not getting their vitamins and minerals – a small portion of sprouts will have them covered!

This burger doesn’t have to be made with ground beef, it can easily be substituted with your favorite type of ground meat like ground chicken, pork, and turkey.

The original yellow Koops’ Mustard worked perfectly in this recipe along with the Clover sprouts from SunGarden Sprouts! But you can experiment with any of the Koops’ Mustards and SunGarden sprouts!

BurgerFit Burrito

My go-to summer meal: a BurgerFit burrito, with whatever ingredients I have on hand in my fridge. I always make sure I have Koops' mustard and SunGarden Sprouts to add to my meals for an extra sauce and extra nutrients!

Instructions

  • Cook burgers on medium heat on the stove for 5 minutes each side or to your preference. Cooking times can vary.
  • Warm tortilla on a skillet for 1-2 minutes on each side.
  • Stuff your burrito with your favorite veggies and top with Koops' Mustard and SunGarden Sprouts!

Notes

  • Slice the burrito into 4 or 5 pieces for BurgerFit "sushi rolls"! Make the meal more fun by eating with chopsticks.

    I had my daughter visit me last weekend and we had such a fun time making this! We skipped on bell peppers and added slices of tomatoes instead. The burst of flavor with the mustard added to it is so out of this world that we ended up making another set for her to bring home. The world definitely needs to know about this recipe!
