The perfect "throw-together" meal

Gluten-Free Sauteed Vegetables with Honey Mustard Sauce is one of my favorite “throw-together” meals of all time. It’s savory, a little sweet, gluten-free, dairy-free, and paleo! Zucchini and carrots taste amazing together and they look so pretty with the pop of green and orange!

I cooked this meal for myself for a quick lunch, but you could easily saute several zucchini and carrots for a much larger meal to feed your family or have a few lunches made at once. I sauteed them in olive oil with fresh garlic and then topped it with a pinch of the BurgerFit smoked salts. After sauteing the vegetables, I made quick & easy honey mustard from the Organic Spicy Brown Koops’ Mustard and honey and drizzled it over the carrots and zucchini. Using the leftover olive oil and garlic from cooking the veggies, I lightly tossed the arugula for a side salad – I did not cook it, just coated it with the oil and garlic. Then I removed the arugula from the skillet, put it in a bowl, added some balsamic vinegar, sprinkled on our BurgerFit smoked salts, and tossed it all together to coat.

A few substitution ideas:

  • Use any vegetables that you have and saute them with the honey mustard sauce.
  • You can use any cooking oil of your choice, like coconut oil, avocado oil, rendered lard, tallow, etc.
  • You can easily replace the honey with maple syrup!
  • If you have don’t have fresh garlic, use garlic powder instead.

Even though I used the Organic Spicy Brown Koops’ Mustard in this recipe, you can use almost any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:

  1. Stone Ground Mustard
  2. Original Yellow Mustard
  3. Dijon Koops’ Mustard
  4. Horseradish Koops’ Mustard

A beautiful thing about a salad and sauteed veggies is that any of the BurgerFit burger recipes are delicious with it! A few of my favorite BurgerFit recipes to eat with this are:

  1. 4 Pepper
  2. Brocolli
  3. Sweet Potato & Rosemary
  4. Asian
  5. Beans, Greens, and Balsamic

Ingredients

Sauteed Veggies & Mustard Sauce

Arugula Side Salad

Instructions

  • Heat a skillet over medium heat and add the olive oil.
  • Chop the zucchini and carrots and add to the skillet. Mince the garlic.
  • Sautee the veggies until just about tender and add the garlic. Continue sauteing until veggies are tender and garlic is fragrant.
  • While the veggies are finishing cooking, add the BurgerFit burger to the other side of the skillet to heat up.
  • Mix together the Spicy Brown Mustard and the honey until thoroughly combined.
  • Remove the veggies and BurgerFit burger from the skillet. Drizzle the honey mustard over the veggies.
  • Let the remaining oil in the skillet cool slightly. Add the arugula to the skillet and toss to coat the greens in the garlic-infused oil. Remove from the skillet and add to a bowl. Add the balsamic vinegar and toss to coat the greens. Sprinkle with BurgerFit Smoked Salts.
  • Add the greens as a side to the veggies and BurgerFit burger.

Notes
