This Pesto flatbread with Ranch Dressing recipe is so quick and delicious to make – no wonder it is a BFF (BurgerFit Favorite!). Seriously, make two of them while you’re at it, they are that good. And when you dip this flatbread in this no-mayo, keto ranch dressing recipe, it is pure happiness in your mouth. When I was in high school, we didn’t have a cafeteria at our school so food different vendors would come in at lunchtime for those that didn’t bring their lunch. If you got pizza, dipping it in ranch dressing was always the thing to do! This flatbread and ranch dressing combo is a much healthier version that you don’t have to feel guilty about.
 
Even though I used the Dijon Koops’ Mustard in the keto ranch dressing recipe, you can experiment with any of the Koops’ Mustards! Some other ones that I think would be great in this recipe are:
 
  1. Spicy Brown Koops’ Mustard
  2. Yellow Koops’ Mustard
If I could find a gluten-free naan or flatbread, that would be my preference. Unfortunately, none of our local grocery stores have a gluten-free option. I love using naan bread because, well, it is delicious, but it also makes the perfect size flatbread for an individual size or you can make a couple of them as an appetizer. This recipe was adapted from our original BurgerFit Deconstructed recipe. By using chopped green onion, I cut down on time not caramelizing the onions. It is just one way you can change up a recipe and it still turns out delicious! I used the Zucchini Pesto BurgerFit burgers in this recipe but a few of my favorite BurgerFit burger recipes to use with this flatbread are:
  1. Beet
  2. Brussels Sprouts & Raisin
  3. Spinach & Mushroom
  4. Southern
  5. Sundried Tomato & Artichoke

No-Mayo Ranch Dressing

Keto, gluten-free, no-mayo ranch dressing is simple to make and you most likely have all the ingredients you need on hand!

Liquid measuring cups
Measuring spoons
Citrus juicer
Mason jar
Cutting board

Ingredients

Instructions

  • Mix lemon juice or ACV with the milk and let sit for 5 minutes. Note: you can do this right in the jar!
  • Combine all ingredients together in a jar and shake until thoroughly combined.
  • Store in the refrigerator and use within a week.

Notes

  1. Make it spicy by adding a 1/8 tsp cayenne pepper!
  2. Omit the milk if you are using regular plain yogurt so that it isn't overly runny.
  3. Experiment with other herb blends like parsley and thyme.

*** Instead of caramelizing the onions that we would have normally done in this flatbread recipe, we sprinkled chopped green onions on top, which caters to my “use what you have” philosophy when cooking.

Utensil for mixing
Spreading knife

Cutting board

Ingredients

  • 1 piece naan or flatbread of choice
  • Green onions chopped
  • Feta or goat cheese to taste
  • 1 BurgerFit burger broken into bite-size pieces
  • 1-2 tbsp pesto or a pepper jam
  • 1 tbsp cooking fat

Instructions

  • Chop green onion.
  • Spread pesto or pepper jam onto flatbread.
  • Add chopped green onions, BurgerFit burger and cheese
  • Bake at 425 degrees for 7 minutes, or until bread is toasted.
  • Remove from oven and let cool for 1-2 minutes.
  • Cut and enjoy!

Notes

  1. Make it gluten-free by using a gluten-free naan bread or pizza crust.
  2. Make it dairy-free by omitting the cheese.
