Mother’s Day is this weekend and there is nothing better for a mom than not having to think about mealtime! This healthy and delicious Carrot & Thyme BurgerFit Mother’s Day Lunch is a fantastic meal to pass onto your S.O. and young ones to prepare for you – one that everyone will love AND will get them eating their veggies! With a side of fries, the meal with be complete and your whole family will be ready to gobble it down. While I love our Rosemary Potatoes recipe, if you really need to make mealtime easy for your kids and spouse, they can simply add oven-cooked fries as we did in this one.

Trying to get kids to eat vegetables can be really difficult and that is why I love that this burger is blended with oven roast carrots and thyme. Carrots are such a great vegetable to blend with ground meat since they add a little sweetness to the meat. You can even opt for the purple carrots that blend in really well to ground beef and kids (and picky adults) won’t even know they are eating vegetables! Using sprouts can also be a win for getting a kid to eat vegetables. A broccoli and clover sprout is a lot less intimidating to try than a whole vegetable, especially broccoli! Sprouts are cute and fun and they make kids curious. Plus, sprouts have such a concentrated amount of nutrients that you don’t have to worry about your kids not getting their vitamins and minerals – a small portion of sprouts will have them covered!

When cooking the carrots, I used coconut oil but you could use any cooking fat that you prefer to cook with: olive oil, avocado oil, lard, tallow, etc.

I love using mustard on top of the burger, I used the Honey Dijon Koops’ Mustard and used the Arizona Heat Koops’ Mustard for dipping my fries into. I used the mild and simple Broccoli and Clover SunGarden Sprouts for on top but any of the Koops’ Mustards and SunGarden sprouts would be delicious!

For my boys, they love eating their burgers in a bun but my favorite way to eat this burger is over a bed of greens with sprouts and mustard on top. I’ll also throw any of the unused carrots, even if it is already blended, on the greens too. It is so delicious!! I usually don’t even use a salad dressing and use the mustard as if it was. If I decide I want a little dressing, I’ll usually whip up one of my favorite ones. Carrot & Thyme BurgerFit Burger

It wasn’t until much later in my life that I started liking carrots. I never understood why people liked them, even when they were covered in ranch dressing. I wish I’d had BurgerFit burgers growing up so that I could have adapted my tastebuds sooner. This burger is delicious any way it is served, and the flavors are subtle enough that it can pass as a traditional burger if needed for your family.

Ingredients

  • 3 carrots
  • 1 tablespoon & 1 teaspoon cooking fat divided
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt divided
  • 2 cups raw kale
  • 1 lb ground meat

Instructions

  • Preheat the oven to 350 degrees. Cut the stems off the carrots, quarter them lengthwise, and then cut them crosswise (no need to peel the carrots, unless you prefer to). Mix with 1 tablespoon cooking fat and thyme, then roast on a baking tray for 20 minutes. While the carrots are roasting, heat a skillet on medium heat with 1 teaspoon cooking fat and sauté the kale until cooked down, about 10 minutes.
  • Once the carrots and kale are cooked, put the carrots, kale, thyme, and ½ teaspoon salt in the food processor (or finely chop). Taste vegetable mixture and add more salt if desired. Let the mixture cool completely. 
  • In a large bowl, mix the ground meat and remaining teaspoon of salt. Gradually incorporate vegetable mixture into the ground meat. Add as much as you can while still being able to form your burgers as normal.
    *If you end up adding too much vegetable mixture, don’t worry! Just form your burgers and cook in the oven for 20 minutes at 350 degrees.
  • Cook burgers on medium heat on the stove for 5 minutes each side or to your preference. Cooking times can vary.
  • Optional: Serve on a green salad with lemon poppyseed dressing
